Sounds like a good project man, hopefully someone can chime in with some for sale parts as I dont have any.  However, there are lots of guys putting these engines into jet boats down under and Im pretty sure they have all the parts needed to convert them to water cooling including the manifolds and everything.

Dug up from a very old thread.  Maybe this will give you a starting point.

Rollco and WASP marine in N.Z. makes cast watercooled manifolds, or you could make water cooled extractors. I know a guy that makes these. Alternatively, the same guy had some special insulation put on some marine extractors he used. looked like a fiberglass plaster that doctors put on a broken arm. Can touch the outside and not burn yourself - fairly bulky though. Rollco and WASP marine in NZ both make sterndrive bellhousings, jet bellhousings and softclutches also for these engines. My lexus in a 17.5 foot ski boat goes ok, but needs more power to pull 2 skiiers out comfortably - thats why its getting blown.
cheers,
Andrew

yes it will be a fun project!!
i have tried rolco here in australia and they can pair brand new for $1000 which is ok. There was a guy i Albury who made them but recently badly injured himself on a lathe so he's out of action now.
im thinking i'll try the NZ boys as I have a friend over there especially for the sterndrive bellhousings. I have made an adapter plate to mount the old mercruiser bellhousing from the old 3.0 which seems ok but if WASP in NZ make them thats even better!!.
I would think these engines would have easily enough grunt to pull 2 skiers you would have to prop it right and just rev it hard!!

Please post any and all suppliers and addresses, someone will need them someday. I might put a 4.7 in mine, supercharged. Plenty of room in a vdrive.
