Trailer hitch for a 2000 4Runner

Just got a 2000 4Runner V6 to tow my 1999 Epic 22 to and from the lake (short distance; the ramp is only 3.5 miles away).

Wondering what kind of hitch to get. I was thinking of getting a 1-inch spoon (Class 3) and flipping it upside down.

Does this sound about right? I know the 4Runners squat quite a bit in the back when towing.
