So I took the boat out for the first time and when I was driving around at 35 mph/4,000 rpm, the oil pressure was pinned at 80/max. Is that normal? When in idle it's at 40, and then when trolling it's around 25.

That is normal for my boat.  If you have the digital display, it will read up near 100 and come down to about 35-40 when cruising slow.  At least that's the way mine has been for the past 17 seasons.

All good. Like the Sequoia, looks like low pressure at idle. Under strain it should rise.
