I've been wake surfing with my friend who has a Centurion Enzo since late last summer.  This past week, we tried my new Inland Surfer Blue Lake board and had a great time at Lake Powell.

Any recommendations on the ballast set-up to wake surf behind my SX?

I tried a 600 lb sack in the trunk with 350 lb sack in the walkway plus my 700 lb factory ballast.  The wake was okay but not as good as the Enzo with 1200 lbs in the back.

We did the Bump in trunk, a 350 in the v-drive locker, 400-lbs of lead under the port, rear seat, then layed a tube sack (375) over the port seat cushions. There may have been a second bag partially-filled on top the other v-drive bag. I think there might be a little fresher mention of this in the 'v-drve ballst starting from scratch' thread.

We're thinking of getting a wake surfboard.? Will a 6'1" wake surfboard fit in the trunk of an Epic 22/direct drive?? My boat's still in storage, so I can't get a measurement for a few more weeks.

Also, I was wondering if size really matters?!? (when it comes to wake surfboards...)? I know a few companies put out surf boards that are 5'-something" long.? Others put out 6' boards.? Is a longer board better?? If so, why?

Size and brand are really a personal preference.  My expert wakesurfer friend has three boards.  Of the hyperlite broadcast, cwb ride and inland surfer blue lake, he likes the blue lake the best so far.

The blue lake is 5'6" and is a tight fit getting it into my trunk.  If your trunk hatch opens more than mine, then you might be able to fit a bigger board.
